Ingredients
  

Stir-Fry Ingredients

  • 1 lb chicken thigh sliced into thin strips
  • 2 cups broccoli cut into florets
  • 2 tbsp coconut oil
  • 2 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp sesame oil
  • 1 tsp ginger grated
  • 2 cloves garlic minced
  • 1 tsp red pepper flakes optional, for heat

Instructions
 

  • Heat coconut oil in a wok or large skillet over medium-high heat.
  • Add chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  • In the same pan, add broccoli and stir-fry for 3-4 minutes until crisp-tender.
  • Add garlic, ginger, and red pepper flakes, stirring for 1 minute.
  • Return chicken to the pan, add soy sauce, sesame oil, and erythritol (if using), and stir to coat evenly. Cook for 2 minutes.
  • Serve hot.
