Ingredients
  

  • 1 bell pepper organic, halved
  • 1/4 pound ground beef organic, grass-fed
  • 1/4 cup spinach organic, chopped
  • 1/4 cup tomatoes organic, chopped
  • 1/4 cup cheddar cheese organic, shredded
  • 1 tbsp olive oil organic, extra virgin

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Slice the bell pepper in half and remove seeds.
  • Cook ground beef in a skillet with olive oil until browned.
  • Stir in spinach and tomatoes.
  • Stuff mixture into pepper halves, top with cheese.
  • Bake for 15 minutes until cheese is melted.
